If you are looking for a delicious alternative to high carb Chinese food have I got the recipe for you. This lunch was filling and tastes wonderful.
I had some left over chicken leg quarters from dinner the other night so instead of reheating them in the oven and serving with a vegetable, I decided to make something a little different.
Follow up:
I removed the chicken skin and broiled those in the oven to make them nice and crispy. The rest of the chicken was steamed. I then took some cauliflower and riced it with a cheese grater. Added the riced cauliflower to a skillet with olive oil and cooked for a bit. Then added some butter, pepper, onion powder, garlic powder and thinly sliced onions and a dash of soy sauce (add to taste but be careful it can be salty).
I chopped up the crispy chicken skin and mixed this into the cauliflower and then mixed the chicken in. P.S. If you like it spicy do what my hubby did and add a little cayenne and red pepper flakes.
This tasted just like Chinese food and was so simple with the leftover chicken. Try it next time you have leftovers. Next time I will add bean sprouts and a bit of broccoli florets for color.
